Food and Freebies :]


    I'm linking up with Jenn from Peas and Crayons for my very first What I Ate Wednesday :) Here is a random lunch from last week:

    ONE: Mixed fruit (strawberries, bananas, grapes, black raspberries, and blueberries).
    TWO: The best fruit dip everrrr (equal parts strawberry yogurt and Cool Whip).
    THREE: Zucchini fries (see recipe below!) and Ranch dressing.

    Annnd another lunch. It's the only meal I remember to photograph!

     ONE: Salad with mushrooms, green pepper, shredded cheese, and tomatos
    TWO: Tomato soup
    THREE: (Slightly burnt) grilled cheese...& the Ranch dressing is for the salad.

    Here is the recipe for these delicious zucchini fries. I'm a huge fan of fried zucchini, which is served as an appetizer at some restaurants. This is an easy a super easy way to make it at home. I found this recipe via Food Gawker by searching for "zucchini fries".

    Preparation:
    Gather...
    zucchini (amount doesn't really matter...I used 3 and that was more than enough for an appetizer for 2 people)
    bread crumbs (the recipe calls for Shake-N-Bake mix...you can also use corn flakes or crushed crackers)
    Parmesan cheese (just for more flavor!)
    1 egg (if you don't eat eggs, any substance that will make the bread crumbs stick to the zucchini will work...such as olive oil or Italian dressing)
    Pre-heat the oven to 450°

    Step 1: Cut zucchini in half (hamburger cut...for those of you with 1st grade mindsets) and then cut each half into 1/4 in sticks. Really any size will do...You'll just have fat or skinny fries!
    Step 2: Mix bread crumbs and Parmesan cheese in a small bowl. (1 part cheese, 2-3 parts crumbs)
    Step 3: Whisk egg.
    Step 4: Dip zucchini sticks in egg, roll sticks in crumb/cheese mixer until coated, then place on a cookie sheet.
    Step 5: Bake at 450° for 12-13 minutes.
    Step 6: Enjoy! I recommend eating them warm with Ranch dressing...but I'm an abnormally large fan of Ranch dressing, so that's not a required step. JD liked them plain.
